Blueberry Bran Muffins.

They are actually supposed to be called "Low Fat" Blueberry Bran Muffins, but that just makes them sound far too healthy, low fat and bran, that is a little too much. The recipe calls for nonfat milk, but I used homogenized. They turned out really well and they are tasty too.

Ingredients:
1 1/2 cups wheat bran
1 cup nonfat milk
1/2 cup unsweetened applesauce
1 egg
2/3 cup brown sugar
1/2 tsp vanilla
1/2 cup white flour
1/2 cup brown flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup blueberries

Directions:
Mix bran and milk together, let sit for 10 minutes. Preheat oven to 375*F. In a large bowl mix together applesauce, egg, brown sugar and vanilla. Stir in bran mixture. In a separate bowl sift together white flour, brown flour, baking powder, baking soda and salt. Stir into bran mixture just until blended. Fold in blueberries. Scoop into muffin cups. Bake for 15-20 minuets, or until toothpick comes out clean.
Makes approximately 12 muffins.
