1/2 cup margarine
3/4 cup sugar
1 egg
1 1/2 cups flour
1 tsp backing soda
1/2 tsp salt
1 tsp cinnamon
1/8 tsp nutmeg
1 tsp vanilla
1/2 cup crushed almonds
2 small apples, peeled and graded
1/2 cup raisins (optional)
For the topping:
1/8 cup brown sugar, packed
1/2 tsp cinnamon
Cream margarine and sugar, add egg and mix. Add apples and vanilla mix together. Then add all the dry ingredients. In a small bowl mix together the brown sugar and cinnamon for the topping. Place batter into muffin tins and sprinkle with topping. Bake for 25 min at 350 F.
